How it works

Two numbers matter most: general hardness (GH) — how much calcium and magnesium is in the water, and alkalinity (KH) — how much bicarbonate is there to buffer acidity. GH helps extract flavor; KH controls perceived brightness and protects your machine from corrosion. Too little of either produces flat, sour cups; too much of either mutes acidity and scales your machine.

Step-by-step

  1. Get a GH/KH test kit (aquarium shops sell them cheaply) or check your local water report.
  2. Enter your GH and KH values above.
  3. Compare to the SCA target and follow the recommendation shown.
  4. If needed, blend tap and bottled water, or start from distilled water plus a mineral recipe (e.g. Third Wave Water).

FAQ

Should I brew with distilled water?

No — pure distilled water extracts poorly and can leach metals. Add minerals back first.

Is bottled spring water fine?

Some brands (Volvic-style low mineral) brew beautifully. Check the label for calcium and bicarbonate values.

Will hard water damage my espresso machine?

Yes — scale builds up quickly above 100 ppm KH. Descale monthly or run softened water.

Why does my coffee taste chalky?

High KH neutralises acidity. Try softer water or blend 50/50 with distilled.
